Food plays an important role in culture and everyone’s daily lives.
As globalization slowly took place, different cultures were able to influence others. Over time, these outside influences usually become deeply integrated within the local culture. We would like to examine how this integration has evolved through the culture of food. We compare and contrast the influences the French and Chinese have had on a third country’s cuisine across Africa, the Americas, and Asia by examining the food culture and history of Mauritius, Trinidad, and Vietnam. The influences are integrated into the local country’s food in different ways, due in part to local ingredients, dietary preferences and lifestyles.
